  • Executive Chef & Author of "Beyond My Chef Coat" Kevin Des Chenes has over 20 years of experience in the Hospitality industry. He was named "Top Chef" by Las Vegas Food & Wine and is the winner of "Top Celebrity Chef Showdown." He has been a Chef Expert for Gordon Ramsey and appeared as a Featured Chef on Food Network's Chef Wanted, Beat Bobby Flay & The Today Show as well as the Nationally Syndicated Better Show, CT Style, Better CT, Fox Morning Show & The Rhode Show among others. He is also an advocate for such charities as Michelle's Place & The Light Foundation. Chef Kevin's creativity in the kitchen & on the screen has not gone unnoticed.   • Two years ago, Executive Chef Simone Ferrara earned accolades as one of Zagat’s 2015 “30 Under 30 – San Francisco” – a prestigious group Zagat dubbed the “next generation of food-and-drink greats.” Now the accomplished young chef brings his culinary expertise to Newport. A native of Torino, Italy, Ferrara recently signed on as Executive Chef at Hotel Viking. This isn’t Ferrara’s first venture in the City by the Sea. From 2010 to 2013, he was the executive sous chef at Newport’s Pasta Beach, an offshoot of a Boston restaurant by the same name. In 2015, Ferrara told Zagat his culinary style is a reflection of his heritage: olive growing and pasta making on his grandfather’s side and French influence on his mother’s side. He travels frequently to Italy to reconnect with his culinary roots and pick up new ideas to incorporate into his stateside interests. Prior to joining Hotel Viking, Ferrara was the kitchen manager at San Francisco’s 2-Michelin-starred Acquerello Restaurant. Previously, he was Chef de Cuisine at Desco in Oakland, California. He earned a degree in culinary arts in his home town of Torino and studied haute cuisine and molecular techniques at Harvard University. 

  • Captains Brian and Peter Bacon and Captain Shamus Mara of Big Game Sport Fishing have been fishing the Southern New England waters from Rhode Island to the Florida Keys and Bahamas for 30 years. They are best known as the owners and operators of Rhode Island’s premiere charter boat fleet and have a true passion for fishing our local waters. The Big Game crew was recently named 2017’s Charter Captains of the year by Sport Fishing Magazine as well as being featured in On the Water Magazine. All three captains are sought after to present and speak on a multitude of topics such as: water safety, migration patterns, eco-tourism along with responsible and sustainable practices for the industry.
